I love chicken. It is so fast to cook, healthy, and everyone loves the flavor. You can do almost anything with it and it is always a hit. I cook with chicken all the time, but sometimes I feel a little repetitive. That is when I started searching Pinterest for new recipe ideas. They have so many great recipes on there that it is hard to know where to start. Here are a few of my family’s new favorite chicken recipes:

  1. Cheesy Chicken Lasagna – With a hint of ranch, this cheesy lasagna is not as heavy as regular lasagna but has all the great flavor. Simple ingredients and easy to make, I add a few finely chopped veggies to mine to give it some teeth and then serve. My family loves it! If you don’t want to go through the hassle of layer the lasagna noodles, you can always substitute penne and just mix it up!
  2. Chicken and Biscuit Casserole–If your family loves the flavor of chicken pot pies but you don’t want to go to all the effort, then try this easy recipe. Simple, mild flavors make this a hit for even a picky palate. I add diced carrots and potatoes to mine to give it something more, but you don’t have to. I recommend using frozen veggies. They just hold up better after baking then canned.
  3. Chicken Dumpling Casserole–I love, love, love chicken and dumplings. However this southern treat has its pitfalls. Sometimes you end up with dumpling gravy instead. So, this recipe is a quick fix. Turns out yummy every time!
  4. Chicken Spaghetti–This recipe is practically famous on Pinterest, and for good reason. Full of yummy ingredients and step by step photo directions, it is easy to make despite the long ingredient list. Start from scratch or simplify it with leftovers, either way it is delicious. It is a little spicy, but you can vary it according to your family’s tastes.

These are just a few of the millions of great recipes I have run across on Pinterest. I could literally Pin all day long! Try them out with your family and see which new easy chicken recipe becomes a hit!
